Febe Coffee

This Irvine cafe specializes in einspanner drinks using Stereoscope coffees and Mizuba matcha teas

In May 2025, Febe Coffee quickly and unexpectedly replaced Baum Tea & Coffee, an Irvine Northpark cafe that was arguably better known for its Japanese-style souffle pancakes than anything else – and in our experience, not particularly great at those pancakes. So we weren’t disappointed to discover that Febe has done away with those in favor of three basic categories: coffee drinks made with beans from local roastery Stereoscope, tea drinks made with Mizuba matcha, and pre-baked pastries served warm or at room temperature as you prefer.

Coffee and green drinks can be ordered with egg cream, einspanner-style (topped with thick sweet cream), and/or with other toppings ranging from crumbled cookies to fruit creams. Febe describes the einspanners as its “signature” offering, with cream flavors ranging from ube, black sesame, and matcha – the latter for a “double” matcha cream-topped matcha tea – to locally uncommon choices such as earl grey, peanut, mango, and corn. Though signs focus on those creamy iced drinks, a laminated menu at the counter also offers traditional hot espresso variants ($5-7), “pure” teas ($5), sparkling teas ($6.50), and ice blended drinks ($7.50). Most of the other drinks are in the $6-7 range, with some slightly higher or lower, and extras such as jellies, popping boba, or alternative milks costing extra; standard boba are notably unavailable.

A small collection of sweet and savory baked goods are stored in a display at the front counter. Febe also offers two sandwich options – egg on brioche ($8) or ham/cheese on a croissant ($10) – with the option of pork, bacon, or avocado add-ons (+$2), though it’s clear that beverages are really the main focus.

Of the four drinks we tried, we particularly enjoyed the Lotus Einspanner, a cold espresso and milk drink topped with Biscoff cream and cookies, and Banana Pudding Matcha, which had a nice layer of sweet banana cream on top; these toppings were arguably more compelling individually than the coffee and tea underneath, and while mixing them wasn’t bad, it wasn’t the ideal use of the higher-quality beans and matcha powders Febe sources. We were also good with the Strawberry Matcha, which arrived with strawberry cream on top and puree on the bottom, blending its tea and fruit flavors perfectly, but less enthusiastic about the Egg Coffee, which wasn’t up to Da Vien or similar standards on either egg foam or cafe sua da-style coffee flavors. Surprisingly, the best items we tried were Febe’s sweet and soft almond croissant, and a double chocolate/chocolate chip muffin, each large, soft, and lightly warmed.

While Febe’s drink offerings could use a little fine tuning to optimize flavor balances, we enjoyed more than half of what we ordered and found enough intriguing choices on the menu to consider revisiting in the future. We prefer Febe to the Baum cafe it replaced, and would recommend it as a stop for drinks or desserts after either neighboring Korean fried chicken hotspot Furai or family restaurant Seoul Haus.
